This is the post Valentine’s Day blog, which would have been on V-Day but alas I fell asleep. But for the first time in a long time I had a wonderful V-Day. Since I am also slightly exhausted today from various cooking project that will be posted at a latter date I will Do this blog in pictures with captions and a few recipes. Captain Laziness away…

There was supposed to be an image of the heart shaped ravioli that I made but I didn’t have any white flour so they were made with wheat. They tasted wonderful and were of course better for us but they looked like little grey melting hearts of sadness.

Dessert was a hollowed out apple stuffed with cinnamon sugar apple bits and a oatmeal topping. Nom Nom Nom.

Now for the recipes

Homemade pasta

Ingredients

4 Large Eggs

1 tbsp. water, plus more as needed

1 tbsp. olive oil

3 ½ cups all purpose flour

½ tsp. salt

Directions

In a bowl combine the eggs, 1 tablespoon of water and the olive oil. Mix on low with a hand mixer or a stand mixer if you have one. When done start to add the flour one cup at a time, mixing it in after each time. Around the second cup it might become necessary to mix it by hand. If the mixture is not coming together add more water, about 1 tablespoon at a time until the dough comes together. Take the dough from the bowl and move to your works surface and knead for about 1 minute. Place back in the bowl and cover with a towel to let rest for 20 min.

Now begins the tricky part if you do not have a nice sheet roller. Divide your dough into four equal pieces.  Lightly dust your work surface with flour as well as your rolling pin. Commence with the rolling out of the dough. This will take a while, especially if you forgot white flour and had to use wheat. My arms still hurt today. Roll out dough till you get it as thin as you possibly can. It will be different for each person and each rolling. As time goes on and you begin to get tired you adopt a “screw it” attitude towards the thickness in favor of it just being over. Once you get it to it’s desired thickness start to use your heart cookie cutter to cut out your shapes. Set your hearts aside and cover with a towel and begin on your filling.

Three Cheese Ravioli

Ingredients

½ cup ricotta cheese

½ cup shredded mozzarella

½ cup shredded parmesan

1 clove garlic, finely minced

¼ tsp. dried oregano

¼ tsp. dried basil

¼ tsp. salt

Black pepper to taste

In a mixing bowl, combine your ricotta, mozzarella, parmesan, garlic and spices. Mix well with a spoon till all is blended together. Take your heart shaped ravioli and put about 2 tsp on your filling in the middle of the hearts, leaving an edge around the heart to crimp them later. Dip your finger in water and lightly brush it around the edges of the heart. Place another heart on top of the other and press around the edges making sure to get all air our. Take a fork and press it down around the edges to crimp it closed. Bring a large pot of salted water to a boil and cook pasta for about 5 minutes. If you do decide to use the wheat flour it takes around 20-30 minutes to cook. Top with your favorite sauce and serve

Apple Pie in the Apple

Ingredients per apple

Choose as many apples as guests you are having (I prefer McIntosh but the store had Fuji Apples on sale and I love Fuji apples too.)

1 tbsp sugar

½ tbsp all purpose flour

¼ tsp powdered cinnamon

Ingredients for topping

¼ cup melted butter

½ cup oats

½ cup flour

½ cup brown sugar

1 tsp cinnamon

1 pinch of salt

Directions

Preheat your oven to 350F

Mix together all the ingredients for the topping till combined and place in the refrigerator for use later.

Take and wash your apples and dry them. Cut off the top of each one. Use a melon baller start  with one apple by balling out as much of the center core of the apple you can and discard it. Start to then ball out the inside of the apple and place the pulp in a bowl. Be careful not to get too close to the edge but know that I actually pierced mine a couple times before I got the hang of it and it still turned out well. Once you have finished chop up the pulp that is in the bowl into smaller pieces. Return to the bowl and add the ingredients and mix them up with a spoon. When done fill the apple bowl up with the apple pulp and continue this with as many apples as you selected. Take your topping mixture and spoon on to the tops of the apples. There is no right or wrong amount for these just make sure they are covered.

Place in your oven for 30-45 minutes till the tops are golden brown.
